Swedish Meatballs

New recipe.  I looked up the original recipe on http://www.allrecipes.com.  Had to make it my own though and deal with what I had on hand.  Anyway, it turned out really well.  Remember we have ten people (4 adults, six kids ranging in ages from 1-13) living in our house, so when I cook, I tend to cook for an army!

Swedish Meatballs



3# Ground Beef

2# Country Sausage w/Sage

1 cup of bread crumbs (plain)

2 eggs

¾ cup milk

2 T fresh parsley

2 T Worcestershire sauce

1 t black pepper

2 T Oregano

1 T Garlic Pepper (no salt variety)


½ c margarine/butter

¾ c all-purpose flour

3 beef bouillon cubes

1 t paprika

1 t black pepper

1 cup sour cream

½ c milk

1 ½ c hot water

Mix ground beef, sausage, bread crumbs, eggs, milk parsley, Worcestershire sauce, and spices together in a large bowl.  Roll into meatballs.  Bake at 350 degree oven for 40 minutes.

While meatballs are cooking make sauce.  In a saucepan, melt butter, add paprika, pepper, bouillon cubes, and flour.  Mix well.  Add hot water first (preferably a little at a time). Mix well. Add milk, mix again.  Add sour cream, mix a final time.  Let simmer until meatballs are done (I did about five minutes).  When meat balls are done, use a slotted spoon so most of the grease stays on the pan.  Add meatballs to the sauce. Simmer about ten-fifteen minutes.
