Recipe — Thanksgiving Meatloaf

Thanksgiving Meatloaf

3#’s ground turkey

1 medium onion

2-3 stalks celery

2 boxes turkey (or chicken) stuffing

3 eggs

I like to brown my onions and celery before putting them into my meatloaf, but you don’t have too.  Add the veggies to the ground turkey, add stuffing, and eggs and mix.  

Bake at 350 for 1 hour or until 160 degrees.

Move

Well, we’ve stayed at the new house for the past three nights!  Got our bed in last night, so I actually slept last night.  Going well so far, still over at the other house frequently to pick up other things.  Eventually we’ll go through everything in both houses and probably have a yard sale.  

We are in a definite need of a routine, but so far I haven’t been able to set anything up, due to still getting everything settled.  Hopefully, we’ll have less running tomorrow and I can get this house cleaned and get a lot of things that we have in boxes (or the van) put away. 

Enjoying having a decent sized kitchen, need to clean it though.  Made “Meatloaf Cupcakes” tonight.  I made what we call Thanksgiving Meatloaf, because it’s made with ground turkey and stuffing and topped it with mashed potatoes made to look like a cupcake.  I’ll post pictures and the recipe tomorrow.

Almost There!! (with Pics)

Well we’re moving the hot water heater in tomorrow!  So then we’ll be in moving mode instead of fixing mode.  We still have stuff that we need to fix, but everything that needed to be done before we could move in will be done tomorrow.

My husband was working on the floor in my father-in-law’s room tonight, but we’re going to finish that tomorrow!  Can’t wait, if we don’t stay on Sunday, then we’ll probably be staying in the new house on Monday!

Drywall Up!

Well, it took two days to finish, but my husband, his dad, and I finished the drywall on the ceiling of my father-in-laws room!  Kind of sucked that FIL had to work from his chair to hold up the t bar for us when he’s not supposed to do that stuff, but when you only have three people to work that’s what you have to do.  

Yesterday was rough, we did the first two full sheets — holding that up over your head and screwing it in was not fun at all!  Yesterday we put the rest of the parts in.  It’s definitely not the best job, but we worked with what we had.  

After we put it all up we were able to get it all taped and most of it mudded (I think I missed four screws at the end of the day.  My husband helped me with the mudding and taping while I stopped to make dinner. 

It would really help if we had a babysitter, but sometimes you just have to work with what you have. 

Well, have a good night.  Tomorrow should be better.  A friend is coming down from Illinois to help us with the final mudding, sanding, and then helping to put in the laminate floor.  We’re hoping we can be moving in over the weekend, but then again our plans have been going awry lately, so it will probably be next week. 

Will try and post pictures of the room tomorrow — hopefully it will be a little more complete!

Pistachio Fluff

Another requested recipe.  

Pistachio Fluff

1 small box of instant pistachio pudding mix

1 can (20 oz) crushed pineapple in juice — do not drain

1 can fruit cocktail, drained

1 can mandarin oranges, drained (I like the bigger can)

1 container frozen whipped topping

2 cups miniature marshmallows (I like the colored ones!)

Combine pudding and can of crushed pineapple in a large mixing bowl mix well.  Add the rest of your fruit, marshmallows, and whipped topping.  Mix well.  Serve well chilled.  

Feel free to add other fruits:  we’ve added bananas and fresh pineapple.  Grapes, fresh peaches or nectarines would go well.
